Design a food guide poster that will promote healthy eating.
Begin with Canada’s Food Guide. What essential substance for survival is missing from the food guide 'rainbow'?
Use your knowledge, class work and do some research.

Ingredients:
1/2 cup butter softened 1/2 teaspoon salt
1/2 cup brown sugar 1 tablespoon powdered ginger
1/2 cup molasses 1 teaspoon cinnamon
1 egg 1 teaspoon nutmeg
2 1/2 cups flour 1/2 teaspoon ground allspice
1/2 teaspoon baking soda
Cream the butter and sugar together, then beat in the molasses and egg. In a separate bowl mix the flour, baking soda, salt, ginger, cinnamon, nutmeg and allspice. Add the dry ingredients to the first mixture and beat until the dough is thoroughly combined. Cover and chill for about an hour.
Preheat the oven to 350°F and grease some cookie sheets or use a non-stick silicone sheet.
On a lightly floured surface, roll the dough about 1/4” (0.65 cm) thick. Use cookie cutters or a sharp knife to cut the shapes you wish. Transfer the cut pieces of dough, placing them about 1 inch (2.5 cm) apart.
Bake for about seven minutes. Remove from the oven and transfer onto racks to cool.
Buttercream icing
Cream together 1/4 cup butter, 1 cup of icing sugar, one tablespoon - or slightly more - of cream, a splash of vanilla, and food colouring is optional.
French Onion Soup
2 large white onions, sliced paper-thin
2 tbsp butter
2 tbsp flour
2 cans beef stock (undiluted)
1 can chicken stock (undiluted)
1 cup water
1/4 cup dry sherry
Melt the butter and sweat the onions on a low heat until they are a deep golden colour (about 30 minutes). Mix in the flour, add the rest of the ingredients, and simmer slowly for 15 minutes. Cover and refrigerate for at least one day (two days is better).

Ingredients
- 3 cups all-purpose or bread flour
- 1/4 teaspoon of active dry yeast
- 1 1/4 teaspoons salt
- 1 5/8 cups of warm water
Directions
- Whisk the dry ingredients together thoroughly. Add the water and stir until a wet dough forms. Continue stirring until the dough incorporates all the loose flour in the bowl, about 60 seconds in total.
- Cover the bowl with plastic wrap and rest in a warm place for 18 hours. It will double in size, bubble and long gluten strands will form.
- Knock the dough down and form it into a baking pan. Rest the dough a second time. In 2 to 3 hours it will rise again and double in size once more. Bake 45 minutes in an oven preheated to 425 degrees F.

Pizza Dough
Ingredients
- 2 cups lukewarm water
- 2 tablespoons yeast
- 1 teaspoon honey
- 4 cups all-purpose flour
- 2 tablespoons extra virgin olive oil
- 1 teaspoon salt
Directions
- Add water, honey and yeast to a bowl. Let the yeast fully dissolve in water and bloom for 2 minutes.
- Add flour on a smooth work surface and create a well in the centre of the flour. Slowly add the yeast-water mixture, olive oil and salt until the flour has absorb the liquid. Knead until the mixture becomes an even dough consistency. If necessary, add a little more flour to absorb any excess liquid.
- Place the dough in lightly oiled bowl and gently roll the dough to coat in oil. Cover with a towel and let rest for at least one hour or until the dough doubles in size.

Giada's Mac and Cheese Muffins
Adapted from Michael Smith's Country Bread, City Bread
4 cups all purpose or bread flour
1/2 teaspoon active dry yeast
1 1/2 teaspoons salt
2 1/4 cups warm water
splash of extra virgin olive oil
In a large bowl whisk the dry ingredients together, evenly distributing the salt and yeast throughout the flour. Pour in the warm water and olive oil and stir with the handle of a wooden spoon until a moist dough forms. Continue stirring until the dough incorporates all the loose flour in the bowl, 1 or 2 minutes in total.
Cover the bowl with plastic wrap and let rest in a warm place for 18 hours. The dough will double in size and bubble, and long elastic gluten strands will form without laborious kneading. Knock the dough down and toss it with a splash of extra virgin olive oil, evenly coating the dough ball.
Rest it a second time. In 2 to 3 hours it will double in size once more.
Preheat the oven to 500F.
Garlic oil.
Place 1/3 cup of olive oil, sliced garlic garlic, 2 teaspoons of thyme and 1/4 teaspoon of red pepper flakes in a small saucepan and bring to a simmer over low heat. Cook for 10 minutes, making sure the garlic doesn't burn. Roll the dough out a silpat. Top the dough with the oil and salt and pepper. Bake off bread. Be sure to reserve the garlic slices and some oil for dressing the bread after baking.

Hummus
In a food processor add garlic to taste, a splash of olive oil, a tablespoon of tahini and the juice and some zest of a lemon. Blitz ingredients together. Add a can of rinsed garbonzo beans/chick peas, season with pepper and bltiz until smooth. While blitzing, drizzle in olive oil until the hummus reaches the desired texture. Taste to ensure proper seasoning. Serve with cut up vegetables.

Ann Sather's Cinnamon Rolls
1 1/4 oz. envelope = 2 1/4 tsp. active dry yeast
1 tsp. sugar
1/4 c. warm water
1 c. milk, scalded, cooled
1/4 c. butter, melted
1/3 c. sugar
1-1/2 tsp. salt
2-1/2 to 3 c. all-purpose flour
1/4 c. butter, room temperature
1/2 c. brown sugar
1 T. cinnamon, ground
Powdered Sugar Glaze
1/2 c. powdered sugar
1/4 c. butter, melted
1 tsp. Vanilla
In a large bowl, stir the yeast and 1 teaspoon of sugar into the warm water and let it stand for 5 minutes to soften. Stir in milk, melted butter, 1/3 cup sugar, salt and 1 cup of flour. Beat all of this with a spoon or an electric mixer until smooth. Gradually stir in 1-1/2 cups of flour, keeping the dough smooth. If the dough is still moist, stir in 1 tablespoon of flour at a time to make a soft dough. Cover with a dry cloth and let it rise in a warm place until it is doubled in bulk, about 1 hour. Divide the raised dough in half. On a lightly oiled board, roll out (with a lightly floured rolling pin) and stretch 1 piece of dough to make a 30 cm by 20 cm rectangle. Spread 2 tablespoons of the soft butter over the top of the dough. Sprinkle with brown sugar and cinnamon. Beginning on the long side roll up tightly. Repeat with the remaining dough. Cut the dough into 5 cm slices. Place on floured and greased baking sheets. Let the dough rise until doubled in bulk, about 45 minutes. Bake in a preheated 350* F oven for 12 to 15 minutes or until golden brown. Take the cinnamon rolls on the baking sheets out of the oven and place them to cool on a wire rack. Top the rolls with Powdered Sugar Glaze immediately, if desired, and cool or serve warm, as you like. Makes 18 rolls.
Powdered Sugar Glaze
Place all the ingredients into a small bowl and beat until creamy smooth. Glaze the cinnamon rolls immediately after taking them out of the oven. Allow the cinnamon rolls to cool on a wire rack. Serve the cinnamon rolls while still warm or cooled, as you like. Makes enough to glaze 18 cinnamon rolls.

- For the Topping:
- 1 tablespoon salt
- Cracked Black Pepper
- extra virgin olive oil for brushing
Directions
- Dissolve the sugar and yeast into the warm water. Set aside for 10-12 minutes. Combine the flour and salt into a large mixing bowl. Add the water and yeast mixture with the extra virgin olive oil. Once a dough has formed, turn the dough onto a floured work surface and knead for approximately 5 minutes. Shape into a ball.
- Lightly oil a mixing bowl and place the dough inside. Cover and set aside in a warm, draft free location and let rise for 40 minutes (note- the dough should double in size/ volume).
- Remove the dough from the bowl and place the dough onto an oiled baking tray. Spread the dough to the corners of the pan. Brush the dough with olive oil and sprinkle with salt and pepper. Bake the dough in a pre-heated 400-degree oven for 15-20 minutes or until the golden brown. Remove from heat and allow to cool.

The water and sugar will quickly dissolve together and form simple syrup. As the heat increases it’ll begin simmering and steaming and the water will gradually evaporate. Once it’s gone the steam will die down and the temperature will begin to rise leaving behind a pure melted sugar syrup.
As the heat continues to rise the sugar will start to turn pale golden. When you see the first hint of colour gently swirl the pan to keep the colour even. When it’s a deep golden brown, remove from heat, add the butter and whisk it in until the sauce is smooth. This will drop the caramel’s temperature out of the sugar browning range. Add the vanilla and whisk until smooth.
